Tofu Scampi at Bubba Gump Shrimp Company

The Tofu Scampi was so delicious!
The final meal of our family vacation to Southern California took place at the Santa Monica location of Bubba Gump Shrimp Company. There were plenty of fun details from the movie Forrest Gump. Quotes from the film were written on the tables and decorated the restaurant. The servers were friendly and the atmosphere was lively. A bustling gift shop offered tshirts and other stuff. I was surprised that one of my favorite meals of the trip happened at a chain restaurant, but sometimes surprises are the best part.

I spotted the word "vegan" largely displayed by the menu and about fainted because I've never seen anything like that at a restaurant. A seafood place boasting vegan selections. You so crazy California.

The Tofu Scampi jumped out at me from the Vegan Menu. When it appeared at the table, I was thrilled. This dish was simple and pretty; cubes of tofu replaced the usual shrimp but the usual trio of wine, capers and lemon were there. The tofu soaked up the tart yet savory flavors and the linguine was nicely al dente. SO TASTY!

The magnificent view of Santa Monica pier, the surprise vegan menu and the delish pasta made for a memorable end-of-vacation meal.
