Kale Salad. The inevitable blog post.
My usual kale salad goes something like this: strip the kale leaves from the stem, rinse and blot with a paper towel, chop and toss with olive oil (or a half of an avocado), salt, pepper and a generous squeeze of lemon juice. Squish with your hands until it's squishy. (this is fun!)
Kale salad is the easiest and best side dish to anything; fake meaty things, creamy pasta things, sandwiches and soup all work perfectly with this simple and good-for-you salad! It packs well, so bringing it to work is awesome!
