One package of tofu, pressed
1/4 cup diced red onion
1-2 tablespoons of minced garlic
2 tablespoons low-sodium soy sauce
1 teaspoon tumeric
2 teaspoons of garlic powder
3 tablespoons of nutritional yeast
salt and pepper to taste
Press the water out of the tofu with a bunch of paper towels.
Heat your skillet and drizzle with olive oil.
Saute the diced onion, add the minced garlic, and crumble the tofu into the pan.
Let the tofu cook for a few minutes, stirring occasionally, but letting the tofu brown.
Add the soy sauce, tumeric and garlic powder while stirring occasionally. Taste it to see what's going on.
(this is the fun part! I love to watch it turn yellow from the tumeric!)
The tofu should taste cooked by this point, and the spices should be okay, but feel free to adjust to your taste. Add the nutritional yeast and a tablespoon of water.
Keep stirring, make sure you scrape all the bits off of the bottom of the pan. Add more water if needed.
Let it cook for a few more minutes. Add salt and pepper.
I enjoy my tofu scramble topped with fresh herbs, avocado and Sriracha.
If it were tomato season, I'd surely add one.
