Happy Chicken Salad

Just like mom used to make, except without the dead chicken. It's a traditional recipe made vegan: three Gardein Chik'n filets chopped, 1/2 cup of Vegenaise, one diced stalk of celery, a teaspoon of curry powder, salt and pepper to taste and garnished with chives. Served with greens or in a sandwich, 'Happy Chicken Salad' is perfect for summer picnics and brown bag lunches.
