Super Yummy Breakfast Tacos*
One package of extra-firm tofu, drained and pressed
Half an onion, diced
three (or more!!) cloves of garlic, chopped
1/2 cup of nutritional yeast
four or five little red potatoes
1/8 tsp. of tumeric
Salt and Pepper
Go crazy with toppings.
Okay, chop the potatoes up in even little squares, and cook them in an oiled skillet until they are tender. Add the onion, and when that gets translucent, add the tofu (Squish the tofu between your fingers for the best texture.) . Salt and pepper everything. Cook the tofu for a while - make sure it's actually cooked (taste a little!). Add the nutritional yeast, garlic, tumeric and test to see if you need to add more salt and pepper. Cook a bit longer.
Put it in tacos. :)
Go nuts with toppings. I like avocado, chives, hot sauce, jalapenos and anything 'cheesy'.
*This is not so much a recipe, but rather a process, so feel free to change anything. Tofu Scramble is one of those things you can't mess up too badly, and it's always yummy.
