"Cheese" Sauce and Sarah Kramer

 "How it all Vegan" was one of my very first vegan cookbooks, so it has a special place in my heart!  My husband and I must have made every single recipe in there.  It's covered in ten years of flour, soy sauce and who knows what else - that's when you know you have a beloved cookbook!

 The following "cheese" recipe is from "La Dolce Vegan", which has lots of good and easy recipes.  This recipe is my favorite.  It's easy, idiot-proof and can be used for nachos, grilled cheese and for macaroni and cheese.  It stays semi-solid in the fridge, so it's easy to make a double batch for later use (ie: late night nachos). 

If you're not familiar with nutritional yeast, here is some information.  It's a vegan staple, for sure.

Wolffie's Nutritional Yeast "Cheese" Sauce:

1/2 cup Nutritional Yeast flakes
2 tbsp. unbleached all-purpose flour
1/2 tsp. salt
1 cup water
2 tsp. oil (I always use olive oil, but others will do fine)
1-1/2 tsp. prepared mustard (the squeeze bottle kind)
1-1/2 tsp. tamari or soy sauce

In a small saucepan, whisk all ingredients together. Bring to a boil, then reduce heat. Simmer for 2-4 minutes stirring constantly. Makes approximately 1-1/2 cups
